April Student Spotlight
I worked as a Pastry chef since 2005, and began making wedding cakes in 2008. I had a small home business called SuzieCakes, where I made simple and novelty cakes, as well as worked in different catering establishments.
I wanted to go to Bonnie Gordon to become qualified in confectionary arts, to improve my skills and ‘up my game’ when it came to making wedding cakes. I had so many ideas for designs but didn’t know the necessary techniques to make the designs a reality and going to Bonnie Gordon College has helped me so much.
I learned how to mask a cake and how to achieve sharp edges when covering with fondant. I learned different techniques for decorating, including sugar flowers and figure modelling. I loved the chocolate work week; It improved my chocolate skills and I learned how to temper chocolate properly along with several ways to use it as a decorative medium. Bread baking was one of my favourites! Although I don’t use my new found bread making skills too much, I think every baker should understand the process of making bread. I also really enjoyed the sugar and isomalt work with Amanda. I have yet to use it for work but intend to soon.

Overall, attending Bonnie Gordon College improved my skills and taught me to care about the smallest details and to strive for perfection. I have the knowledge, confidence, and ability after the Diploma course to go home and set up my business. I rent a small commercial kitchen and work from there daily. I advertise through my website and through several wedding websites. The business has really taken off and I am gaining a good reputation among the high end wedding scene. I would not have had the confidence to go for it without my qualifications from Bonnie Gordon College. I am so happy that I did the Diploma course in Confectionary Arts; It is one of the best things I have done so far in my life!
