The Designer Cakes Certificate is a unique programme for those wishing to study the fine art of cake decoration and design.  In this comprehensive eight week course students will learn a vast array of skills and techniques needed to produce high quality, custom cakes. Taught by leading industry professionals, the Designer Cakes Certificate Program provides students with an extensive breadth of knowledge through practical, hands-on classes. The course also offers various business seminars, essential for those students looking to start their own small business. This specialized curriculum has been developed to ensure student success, giving students the competitive edge they need when entering the cake design industry.

The Designer Cakes Certificate programme is open to all skill levels and is offered year round.  With your choice of either morning or afternoon classes you too could graduate fully trained and certified in just eight weeks!

Cake Decorating Skills

  • Royal icing piping techniques
  • Design and decorate cakes with fondant and gumpaste
  • Level and dowel cake tiers
  • Colour theory and covering cakes with fondant
  • Learn cutting-edge cake decorating techniques
  • Painting techniques with edible food colours; including stencil, transfer designs and 2D/3D painted effects

Cake Design Skills

  • Modelling Chocolate: Cover and decorate celebration cakes with this delicious alternative to fondant
  • Sculpted Cakes: Carving and design techniques to create life-like celebration cakes
  • Wedding Cakes: Design, sketch and create multi-tired wedding cakes
  • Haute Couture: Be inspired by elements from fashion, while using techniques such as pleating, ruffling, ruching, beading and applying gems

Specialty Skills

  • Gumpaste flowers: Essential flowers used by cake designers to embellish wedding and celebration cakes
  • Figure Modelling: Sculpted seated figure from gumpaste
  • Joseph Lambeth Method: Advanced piping techniques for wedding cake design

Costing Cakes

  • How to give accurate quotes to clients
  • Complete purchase orders and source quality ingredients
  • Accurately measure time to calculate labour, including preparation of ingredients

Cake Photography

  • Introduction to photographing cakes using natural and artificial light

Business Essentials

  • Develop marketing and branding strategies
  • Begin to build a network of industry professionals
  • How to open a bake shop or small business, and essential procedures and permits required
  • Business insurance requirements
